Banana-Chocolate Chip Muffins

1/4 c. sour cream (light is fine)
1 tsp. baking soda
1/4 c. butter
3/4 c. ground flax meal
3/4 c. sugar (or 1/2 c. sugar and 1/4 c. powdered sweet whey or nonfat pwdrd milk)
1 egg
1 1/2 c. whole wheat pastry flour
1/4 c. wheat germ
1/4 tsp. salt
1 c. mashed bananas (about 2 bananas)
1 c. semi-sweet chocolate chips
1 tsp. vanilla
Preheat oven to 350ºF. Stir in sour cream and soda together. Set aside. Cream butter and sugar until light and fluffy. Add egg, beating well. Beat in sour cream mixture. Stir in remaining ingredients. Don’t over-mix. Spoon into greased muffin pans and bake for about 18 minutes. Let cook before removing from pan. Yield: 12 muffins
