  • 1 can S&W Caribbean Beans (not drained or rinsed)
  • Brown rice-cooked (I recommend TJ’s brown jasmine rice)
  • Salsa
  • Sour Cream or Plain yogurt
  • Shredded cheese- Monterrey Jack, Cheddar, Colby (whatever you have around)

In a microwave safe bowl add rice (however much you think your child or children will eat), a tablespoon or two of beans, a teaspoon of salsa, sprinkle with cheese and microwave until warm and cheese is melted. Stir in sour cream- the more you add, the creamier it will be. Serve! It’s easy, inexpensive, and I haven’t met a kid yet who didn’t love it!

*I generally keep the ingredients separate and then make a bowl or two at a time.
