Published: Feb 24, 2009
Commercially baked muffins have become as large as small birthday cakes and loaded with calories and fat. These muffins, on the other hand, are delicious and loaded with fiber and heart-friendly oat bran. They may truly be the breakfast of champions.

Winter Greens Caesar Salad (vegan)
Published: Feb 21, 2009

This delicious recipe comes from my local co-op, PCC, here in Western Washington. It is a hearty salad that is really filling, and surprisingly easy to prepare. Even my husband, who has only met the likes of kale as a rubbery garnish on the side of his plate, thoroughly enjoys this salad.

Creamy Vegetable Bisque
Published: Feb 20, 2009

Frozen vegetables are a great way to get all of the benefits of fresh. Usually picked at their peak and promptly frozen, the freezer is a great place to look for "fresh" veggies this time of year.

Vegetable Bisque sounds complicated and fussy but it is so easy to whip up and so delicious. Plus, it's a yummy way to get kids to eat something green!

No Fail New Year’s Resolutions!
Published: Jan 04, 2009

Yep. It's that time again. Time to utter those 3 words that mean almost certain failure is eminent. New Year's Resolution. Just the word "Resolution" sounds big and unattainable. Yet, it's a new year and gosh darn it, this is THE year. Unfortunately, as in all prior years, reality hits us in the head all too soon and we realize it's just too big to accomplish. So this year instead of resolving to not eat the entire pie, let's resolve to eat just one slice and enjoy every bite.

Pear Zucchini Bread
Published: Nov 09, 2008

When the leaves start falling from the trees and the farmer’s market is loaded with zucchini and pears, we know it’s time to make this delicious bread. Originally from the 1998 Taste of Home magazine and cookbook, I’ve tweaked it over the years to make it just a bit healthier.

Zucchini Rice Pudding
Published: Oct 05, 2008

A few weeks ago I made this recipe (my own personal creation!) and as my 6 year old son was slurping it down I said “There’s a secret ingredient in that pudding.” Pretty sure that I had hidden some unknown treasure in his pudding he excitedly asked “What is it? Tell me, tell me!”

Freezing Zucchini
Published: Oct 05, 2008

Have an abundance of zucchini on your hands? Freezing it is can be a good option! If you are using a large zucchini cut in half length-wise and take a melon baller (scoop) and scrape out the middle. This part contains the seeds and the majority of the water that a zucchini retains. Once you’ve done this shred the zucchini. If it seems really wet then you might want to wring it out a bit. Measure into 1 or 2 cup portions and throw it in the freezer!

Zucchini Lemon Bread
Published: Aug 31, 2008

So many quick breads are basically cake without the frosting. This lemony zucchini bread makes a healthy snack or dessert for the whole family! The original recipe was published in Taste of Home magazine years ago and I have tweaked it to make a healthier, more lemony version. Enjoy!

Easy Cheesecake w/ Berries
Published: Jun 22, 2008

Cheesecake is a family favorite and with berries in season it’s the perfect excuse to whip one up! Although sometimes touted as tricky to make this simple and creamy cheesecake is a recipe that I’ve come to rely on. My kids love it and because it’s relatively low in sugar, high in protein and quite filling it makes for a great dessert option!

Looking for an easy way to add more whole grains to your family’s diet? Replace half of the flour in your quick bread, cookies, pancakes, waffles, or muffins with whole wheat pastry flour (King Arthur Flour is awesome!). Your kids will never know the difference! And you’ll feel good knowing that you made a healthy choice for your family!
